The Basics
Jitter is the variation in how long each response takes, measured from one round trip to the next — not the response time itself.
Every time your device talks to a server, that round trip takes a certain amount of time — the ping, or latency. On a stable connection, that time stays close to the same value from one request to the next. On an unstable one, it swings around, even if the average looks fine. That swing is jitter.
A connection can have low ping but still feel unpredictable if jitter is high, because individual requests are arriving much later or earlier than the average would suggest.

A low ping does not necessarily mean low jitter, and a low average latency does not necessarily mean a stable one — a connection can respond quickly on average while still swinging widely between individual requests.
